Roasted Greens:

  • 3 small summer season squash (i.e., scallop, yellow, zucchini), sliced
  • 1 small eggplant, sliced
  • 1/2 onion, purple or white
  • 1 bell pepper (purple, yellow, or inexperienced), sliced
